Palestinian cuisine is one of the rich eastern kitchens in the Levant region, which overlaps heavily with the culinary arts of the Levant. The national dish of Palestine is the heater. Palestine’s history of ruling many different empires clearly reflects on the kitchen, which has benefited from various cultural contributions and exchanges.

Palestinian dishes have been influenced by three major civilizations the Arab, Persian, and Turkish civilizations. The Arab conquest of Syria and Palestine has influenced the simple culinary traditions, which are primarily based on the use of rice, lamb and yogurt throughout history.

Maintaining our Roots

Palestinian food is an identity.  It is something that we hold very dear to our hearts as it is drenched in history from the generations that have passed.  Palestinians are warm, homely, family loving people; humble and devoted.

Life is about living, giving, and keeping Palestinian history very much alive.  Celebrating and enjoying our cuisine and our roots is something we feel strongly about.  This is how Palestine on a Plate began; to really share an understanding of dishes that have been cooked for hundreds, or even thousands of years.

There are many debates about which dishes are truly Palestinian , but when looking through history books , photos and records you will find that the basis for many modern interpretations of dishes , like makloubch , mussakhan or hummus are all historically Palestinian and are a staple of the  community.

Acre One of the oldest historical cities in Palestine, it is located on the Mediterranean Sea on the northern head of Haifa Bay, west of the Galilee region, and 179 km northwest of Jerusalem. 

 

The city contains many historical monuments, the most important of which are: Al-Bahja Gardens. It is located two kilometers north of Acre and contains the tomb of “Baha ‘Allah”, the founder of the Baha’i religion.

 

 It has the ALJAZAR Wall, which was erected 15 meters away from the inner wall, and it has nine watchtowers, most notably: Karim Tower, Sultan Tower and Al-Commander Tower. These walls included huge artillery emplacements during the French siege.  Resist Napoleon’s siege of the city.

Sweets in Palestine : Artfully prepared and much loved, sweets are most often served as a late afternoon or early evening treat – or whenever guests appear.  Baklava and many other sweets use very thin philo dough, nuts (walnuts, almonds, cashews or pistachios), and honey or sugar syrup flavored with rose water.  Another very distinctive Palestinian sweet, for which Nablus is especially renowned, is kanafeh, made from mild white cheese topped with a crispy layer of shredded wheat, and covered with sugar syrup.  Most of these sweets are purchased from shops, while Palestinian home chefs prepare puddings.


Some sweets are either seasonal or are associated with specific holidays.  Qatayef, for example, are like thick crepes, stuffed either with mild white cheese or with walnuts, and are typically prepared during the month of Ramadan.

Drinks in Palestine, Tea (sometimes infused with mint or sage) and qahwa arabia, is served throughout the day, especially to visitors.  Arabic coffee  is brewed by placing water, sugar, finely ground coffee, and sometimes cardamom in a small pot, and bringing it to a boil multiple times until the grounds settle.  Arabic coffee, or qahwa ‘arabiyeh, is spiced but unsweetened, and is typically served in minute quantities after a meal. 

 

Sahtein! (“Two healths” or “may your health be redoubled”) is the Arabic equivalent of bon appetit!, to which the response is ala-‘albak – “on your heart” or “same to you.” Guests frequently murmur Sufra daymeh – “may your dining room be eternally blessed” – at the end of a meal.
